apple dumplings

dough: 
2.5 cups all-purpose flour
3 tbsp sugar
2 t baking powder
3/4 t salt
10 T unsalted butter (chilled)
5 T shortening (chilled)
3/4 cup buttermilk 

Mix dry ingredients in a food processor; pulse butter and shortening (wet sand-like consistency); dump into a large bowl; add buttermilk and mix; turn dough onto floured surface and shape into 4"x8" rectangle; cut in half; wrap in saran and chill in fridge for an hour. meanwhile... 


filling: 

6 tbsp sugar
1 t cinnamon (ground)
3 tbsp golden raisins
3 tbsp unsalted butter 

Mix filling ingredients together. make cinnamon sugar with 1 tbsp sugar and 1 t cinnamon.


4 golden delicious apples - peel and cut in half width-wise; core with a melon baller but not to the bottom; put a scoop of filling into cored "bowl". roll out dough to 12" square, then quarter the square, cover with dishtowel while you continue to make other squares.


Do this one at a time: brush edge of square with egg white; put apple in middle; wrap one corner at a time brushing egg white on dough as the glue - until apple is covered up; cut a small vent hole on top (about a 1/2" diameter); brush top and sides with egg white; sprinkle cinnamon sugar over top bake in 425 degree oven, 20-25 minutes until juices bubble. meanwhile... 


sauce:

1 cup apple cider
1 cup water
1 cup sugar
1/2 t cinnamon (ground)
2 tbsp unsalted butter (chilled)
1 tbsp lemon juice

Whisk on medium high to boil (about 15 minutes), then turn to low; add cold butter and lemon juice. take baked apples out of oven; wait 10 minutes; serve with vanilla ice cream and sauce on top (crust should be crispy, crackly). nom.
